In Germany there exist many different ways to make German potato salads. Some add vinegar and beef broth others make it with mayo - depending on the region they come from.

handed down from generation to generation

The following simple salad is my utmost favorite, and I guarantee this recipe is the best ever! This recipe has been in our family for years, and is treasured. Everyone loves my "Swabian Potato Salad" or better my mum's version of it.

With the following recipe you can make a really Swabian potato salad. This special recipe has been handed down from generation to generation - from my Grandma to my Mum, and from Mum to me.

german potato salads

This salad is a favorite among my guests - and I hope, you will love it, too! It is made with vinegar and to give it that extra good taste she adds beef broth.

My favorite german potato salad:
Swabian Potato Salad

4 large, boiled potatoes,
When cooled, peel and slice them thin
(If possible prefer waxy potatoes
for making a salad. Mealy potatoes may
break while cooking.)
200 ml hot beef broth (or vegetable stock)
1 tsp mustard
1 small onion, finely chopped
1 tbsp wine vinegar
1 tsp sunflower oil
salt, white pepper according to your taste

Mix together: vinegar, oil, mustard, onion, salt and pepper1 tbsp. of beef base with 1 cup hot water. Pour the liquid mixture over the potatoes and mix thoroughly.

Enjoy your salad! The potato salad tastes best when it is still slightly warm.

Special Tip: with self made beef broth it tastes even better, if you have the time just try it...

Original German Potato Salad
(with bacon)

This German recipe with bacon is usually the recipe given when you are asking for a typical german potato salad. If you are a fan of bacon then you should really try it!

2 lb. medium red potatoes
6 slices of bacon
3 tbsp vinegar
1 cup of beef stock
1 small onion, chopped
1 rib of celery, chopped
salt and pepper, to taste

Boil potatoes and their jackets until tender. Peel and slice while still warm and allow them to cool. Dice the bacon and brown in a sauté pan. Add the chopped onion and celery and sauté briefly. Remove from heat and add the beef stock. Add this mixture to potatoes. Add salt and pepper, toss gently and refrigerate overnight.

Potato Salad with Double Cream

6 large Potatoes
2 tbsp Salad Cream
80ml Double Cream
Black Pepper, Salt
1 tbsp White Wine Vinegar
2 tbsp Groundnut Oil
1/2 tsp Sugar
1/4 tsp Mustard
150ml hot Vegetable Stock
(or chicken stock)

Boil the potatoes, in their skins, until just tender. The cooking depends on the size of the potatoes. When done, rinse in cold water and allow to cool slightly.
In the meantime, mix all the remaining ingredients except the stock in a large bowl.
When the potatoes have cooled down, remove the skins and slice them into the bowl.
Add the stock and mix well. Garnish with fresh herbs if desired. Serve while still slightly warm.

Guten Appetit!
