Black Forest Cakes

Never heard of Black Forest Cakes? What a pity! If you're a chocolate cake lover or a chocolic that is craving something moist, delicious and very unique, then you have to consider a Black Forest Cake! It's a delectable treasure and simply a masterpiece of flavor and beauty.

Plus, the really great thing about this cake is that it is not hard to make at all. It may take a bit of time but it is time well spent.


In fact, if you can follow instructions and are willing to roll up the old baker sleeves then you too can create this culinary desert sensation.

If you are however in time pressure you might consider to buy it...

My favorite Black Forest Cakes Recipe

So, without further adieu, here is the recipe:

PASTRY:
6 eggs, room temperature
3/4 all-purpose flour
1 c. granulated sugar
1/2 c. cocoa
1/2 c. melted margarine or butter
1 tsp vanilla

Sift flour and cocoa over batter half at a time. Gently fold in each one.

Next, you will fold in the butter and vanilla. Carefully divide butter into 3 greased round 8 inch pans. Bake in oven for about 20 to 30 minutes.

It is done when you can insert a wooden pick and it comes out clean. Let the cake cool for about 5 to 10 minutes. Then, you should turn it onto racks to cool.

Now, it is time to make the delicious filling.

FILLING:
2 14-oz cans cherries, drained,
1/4 cup Kirsch liqueur or sherry
reserved cherry juice
2 tbsp cornstarch
2 tbsp granulated sugar
1 tsp lemon juice
2 cups whipping cream
1/4 cup cocoa
2 tbsp granulated sugar
1 tsp vanilla
1/4 cup of softened butter or margarine
2 cups of icing sugar
1/2 cup cocoa
1/4 cup prepared coffee
1 semisweet baking chocolate square

Next, comes the fun part. You will now carefully drain the cherries. That is, you will place the initial ones on top and the whole cherries will be used as a garnish and the rest will be cut in half. when you do this however, please make sure that you carefully remove any stones.

Next, you should put aside 22 halves and then carefully press them in the icing rims. You'll then sprinkle kirsch over cake layers. Next, you'll add cherry juice, cornstarch, sugar and lemon juice into a small saucepan. Over medium heat, you should carefully whisk the ingredients together.

After a short awhile, you'll notice that the delicious mixture has started to boil and thicken. Remove it and then put it aside. After it has cooled down a bit, you should carefully put in the cherry halves.

Stir and then beat the cream into the mixing bowl until fairly thick. Next, you will add cocoa, sugar and vanilla. Beat until stiff.

Carefully mix all ingredients while adding small amounts of coffee or icing sugar as needed to make proper consistency. You will now pipe a rim of icing around outside edge of 1 cake layer on serving plate. Spoon 1/2 thickened cherries in center. Press a few cherry halves down slightly in icing rim. Spoon about 1/3 whipped cream over top. You should then repeat the entire process a second time. This will make up you second layer.

Lastly, you will spread the remaining icing on third layer and place on top. Cover with remaining 1/3 whipped cream. Place the whole cherries in a circle on top.

Warm chocolate square slightly. Using a vegetable peeler, you should now peel the chocolate forming beautiful curl ribbons. These will be placed in the middle.
